Best Premix Podi Recipes
The South Indians say podi is powdered love in the kitchen! No matter whether you are pouring it over crispy dosas or pouring it into hot rice and ghee, premix podis has an immediate effect of comfort and flavor.
These spice mixes are not only good tasting; but they are also healthy, convenient to keep, and ideal when you are in a hurry in the morning or when you have a snack meal. Now, we will consider some of the best podis to make dosa and rice which can be made once a week and eaten throughout the week.
1. Idli Dosa Milagai Podi (Gunpowder).
Ingredients:
- ½ cup urad dal
- ½ cup chana dal
- 8–10 dry red chillies
- 1 tbsp sesame seeds
- A pinch of hing
- Salt to taste
Preparation:
- Preheat dals until golden.
- Sesame seeds, hing and roast chillies.
- Blend all the ingredients roughly.
- Store airtight.
Serving Tip:
Blend with sesame oil or ghee and it is served with dosa or idli.

2. Curry Leaves Podi (Kariveppilai Podi)

Ingredients:
- 1 cup curry leaves (washed & dried)
- ½ cup urad dal
- 5 red chillies
- 1 tsp cumin seeds
- Salt

- Roast individually, blend and coarsely, and store.

- 8–10 garlic cloves

6. Dry Coconut Podi (Thengai Podi).
Perfect Pair: Dosa, lemon rice or tamarind rice.
Ingredients:
- 1 cup grated dry coconut
- 4 red chillies
- 1 tbsp urad dal
- 1 tsp sesame seeds
- Salt
Preparation:
Roasting all ingredients in a dry way and grinding roughly.

7. Paruppu Podi (Dal Powder)

- ½ cup toor dal

- Roast all of the ingredients and grind roughly and store.

8. Murungai Keerai Podi (Drumstick Leaf Podi).

- 1 cup dried drumstick leaves
- ¼ cup urad dal

- Roast, and cool and grind finely.

9. Tomato Podi (Tangy Mix)
Perfect pair: Dosa and curd rice.
Ingredients:
- ½ cup sun-dried tomato pieces
- 1 tbsp urad dal
- 3 red chillies

- Roast lightly and grind.
