1. Ayurvedic One-Pot Detox Meal: Kitchari.



Best for: particularly digestion as well as detox.

Ingredients:

  • Moong dal – ½ cup
  • White rice / small grain millet- half a cup.
  • Ghee – 1 tbsp
  • Cumin seeds – 1 tsp
  • Mustard seeds – ½ tsp
  • Hing – a pinch
  • Turmeric – ½ tsp
  • Ginger (grated) – 1 tsp
  • Mixed vegetables (carot, beans, peas) -1 cup.
  • Water – 4 cups
  • Salt – to taste

Preparation:

  1. Prepare rice and dal, rinse, and leave to soak 15 minutes.
  2. Heat ghee; put in cumin, mustard, hing, ginger.
  3. Add veggies and sauté 2 minutes.
  4. Add rice-dal mixture, turmeric, salt and water.
  5. Cook and cook until soft and mushy.
  6. serve hot with another drizzling of ghee.



2. Cumin-Coriander-Fennel Detox Water (CCF Tea).



Best for: Bloating, detox.

Ingredients:

  • Cumin seeds – ½ tsp
  • Coriander seeds – ½ tsp
  • Fennel seeds – ½ tsp
  • Water – 2 cups

Preparation:

  1. All the seeds should be boiled in water, 5-7 minutes.
  2. Tense and relax all day long.



3. Turmeric-Ginger Golden Milk



Best for : Immunity, cough

Ingredients:

  • Milk (or almond milk) – 1 cup
  • Fresh ginger- 1/4 tsp (or powder 1/8 tsp)
  • Ginger – ¼ tsp
  • Black pepper – a pinch
  • Cardamom – a pinch
  • Jaggery/honey – optional

Preparation:

  1. Bring milk to a gentle boil.
  2. Add turmeric, ginger, pepper and cardamom.
  3. Bake 2 3 minutes and keep warm.



4. Ayurvedic Veg Stir: Steamed Veggie Thoran.



Ingredients:

  • Vegetables (cabbage, beans, carrot) -2 cups.
  • Coconut grated – 3 tbsp
  • Cumin – ½ tsp
  • Curry leaves – 1 sprig
  • Turmeric – ¼ tsp
  • Coconut oil – 1 tsp
  • Salt – to taste

Preparation:

  1. Steam vegetables until soft.
  2. Bring cumin and curry leaves, heat coconut oil.
  3. Add cooked vegetables, spice, salt.
  4. Stir in grated coconut; Sautee 2 minutes.



5. Warm Spiced Moong Dal Soup



Best for: Digestion, light meal.

Ingredients:

  • Yellow moong dal – ½ cup
  • Water – 2 cups
  • Turmeric – ½ tsp
  • Grated ginger – 1 tsp
  • Cumin seeds – 1 tsp
  • Ghee – 1 tsp
  • Salt – to taste

Preparation:

  1. Add water, turmeric, salt and cook until soft.
  2. Boil Ghee; burn cumin and ginger.
  3. Add to dal and boil after 3 minutes.
  4. Serve warm.



6. Ayurvedic Spiced Buttermilk(Takra)



Beat for : Digestion, acidity.

Ingredients:

  • Homemade curd – ½ cup
  • Water – 1½ cups
  • Cumin powder – ¼ tsp
  • Ginger – a pinch
  • Salt – a pinch
  • Coriander leaves – few

Preparation:

  1. Whisk curd until smooth.
  2. Add water and thin it well.
  3. Mix cumin, ginger, salt.
  4. Add coriander and serve.



7. Ghee-Roasted Banana and Cardamom (Ayurvedic Dessert).



Best for: Energy and digestion.

Ingredients:

  • Ripe banana – 1
  • Ghee – 1 tsp
  • Cardamom – a pinch
  • Jaggery – optional

Preparation:

  1. Warm Ghee and put sliced banana.
  2. Roast until golden.
  3. Add cardamom sprinkles; and add jaggery as desired.



8. Rasam (Digestive Broth) Lemon-Ginger.


Best for : Immunity, cold.

Ingredients:

  • Moong dal cooked water – 1 cup
  • Lemon juice – 1 tbsp
  • Ginger crushed – 1 tsp
  • Pepper-jeera powder – ½ tsp
  • Curry leaves – few
  • Turmeric – ¼ tsp
  • Salt – to taste

Preparation:

  1. Add turmeric, Ginger, pepper-jeera to heat dal water.
  2. Add curry leaves and salt.
  3. Turn off and put lemon juice on it before serving.
