Detox Soup recipes
1. Drumstick Leaf Soup (Murungai Keerai Soup)
Ingredients:
- Drumstick leaves (Murungai Keerai) -1 cup (stuffed in)
- Garlic – 4 cloves (crushed)
- Small onion / Shallots- 5 (finely chopped)
- Tomato – 1 (small, chopped)
- Cumin seeds – ½ tsp
- Pepper powder -1/2 tsp (to taste)
- Turmeric powder – ¼ tsp
- Salt – as needed
- Water – 2 cups
- Ghee or oil – 1 tsp
Preparation:
- Heat ghee or oil in a pan. Add cumin seeds, and allow them to splutter.
- Add onions and garlic cut. Sauté till golden brown.
- Add chopped tomato and cook until it becomes soft.
- Add washed leaves of the drumstick, turmeric powder, pepper and salt.
- Add 2 cups of water and boil 57 minutes.
- When the leaves are cooked and tender, then leave the soup to cool down a little.
- Blend in a hand blender or strain to get a clear soup (optional).
- Hot to eat - this soup is a great source of iron, antioxidants and it is a liver detox.
2. Bottle Gourd Soup (Sorakkai Soup / Lauki Soup)
Ingredients:
- Bottle gourd (Sorakkai) -1 medium (peeled and chopped, approximately 2 cups).
- Onion – 1 (chopped)
- Garlic – 3 cloves
- Cumin seeds – ½ tsp
- Pepper powder – ½ tsp
- Salt – as needed
- Olive oil or ghee – 1 tsp
- Water -2 cups (or vegetable stock)
- Coriander leaves -some to garnish with.
Preparation:
- Heat some oil in a pan and put cumin seeds.
- Add onion and garlic, chop it and sauté till clear.
- Stir in chopped gourd of the bottle.
- Add stock or water, salt and cook covered 10-12 minutes till soft.
- When chilled, mix the mixture to a fine soup.
- Heat the mixed soup once again, add pepper powder and mix thoroughly.
- Serve in warm garnished with fresh coriander leaves.

3. Ginger Ostrich Spinach Soup.
Ingredients:
- Spinach leaves – 2 cups (washed)
- Ginger – 1-inch piece (grated)
- Garlic – 3 cloves (chopped)
- Onion – 1 (chopped)
- Olive oil – 1 tsp
- Cumin powder – ½ tsp
- Salt – to taste
- Pepper powder – ½ tsp
- Stock, either water or vegetable- 2 cups.
- Lemon juice – 1 tsp
Preparation:
- Warm oil in a pan, saute onion, garlic and ginger until these are fragrant.
- Add spinach leaves and cook up till wilted.
- Add cumin powder, pepper, salt, pour in the water or stock.
- Bake 5-6 minutes, and run under cold.
- Blend until smooth and reheat.
- It is served with a refreshing tang of lemon juice.

4. Carrot and Coriander Soup
Ingredients:
- Carrots – 3 (peeled and chopped)
- Onion – 1 (chopped)
- Garlic – 3 cloves
- Coriander leaves fresh - a bunch.
- Cumin seeds – ½ tsp
- Olive oil – 1 tsp
- Pepper powder – ½ tsp
- Salt – as required
- Water or stock (vegetable) -2 1/2 cups
Preparation:
- Heat up oil, cumin seeds, garlic and onion; stir until golden.
- Chopped carrots can be added and sauteed within 2 minutes.
- Add water or stock and cover and cook until carrots are tender.
- Blend and cool to a smooth soup.
- Add pepper and serve with chopped coriander leaves.

5. Sweet Corn and Lemon Grass Soup.
Ingredients:
- Sweet corn kernels – 1 cup
- Lemongrass stalk – 1 (crushed)
- Ginger – 1 tsp (grated)
- Garlic – 2 cloves
- Onion – 1 small (chopped)
- Olive oil – 1 tsp
- Water or stock – 2½ cups
- Pepper and salt – to taste
- Lemon juice – 1 tsp
Preparation:
- Heat oil in pan and saute onion, ginger and garlic.
- Add sweet corn and lemongrass that has been crushed.
- Add the stock and boil after 10 minutes.
- Squeeze lemongrass, mix the soup gently and heat again.
- Stir in pepper, salt and lemon juice.

Cooling and purifying; aids in clearing toxins and reducing digestion.
6. Broccoli and Garlic Soup
Ingredients:
- Broccoli florets – 1½ cups
- Garlic – 4 cloves
- Onion – 1 small
- Olive oil – 1 tsp
- Salt – as needed
- Pepper – ½ tsp
- Water or stock – 2 cups
Preparation:
- Add hot oil in a pan, sauté the onion and garlic until they become aromatized.
- Saute in broccoli and one minute.
- Add water or stock, cover, and cook 6-8min.
- Put the mixture back into a blender and reheat and add salt and pepper.

7. Tomato and Basil Detox Soup
Ingredients:
- Ripe tomatoes – 4 (chopped)
- Garlic – 4 cloves
- Onion – 1 (chopped)
- Basil leaves A handful (fresh or dried)
- Olive oil – 1 tsp
- Salt – to taste
- Pepper – ½ tsp
- Water or stock – 2 cups
Preparation:
- Add onions and garlic in the oil.
- Add tomatoes cut in pieces and cook until soft.
- Add basil, salt, pepper and water; simmers so 8-10 mins.
- Keep mixing until smooth, strain (where necessary) and serve hot.
