Forgotten Indian Ingredients: Healthy, Local & Sustainable



1.Banana Stem Tacos (Indian Mexican Fusion)



Ingredients:

  • 1 sm cut-up banana stem (finely), chopped.
  • 1 onion (finely chopped)
  • 1 green chilli
  • ½ tsp turmeric
  • ½ tsp pepper powder
  • 1 tsp lemon juice
  • 4 small whole-wheat/millet tortillas.
  • Salt to taste
  • 1 tsp oil

Preparation:

  1. Sautee onions and chilli in heat oil.
  2. A chopped banana stem, turmeric, salt, pepper.
  3. Cook 5–6 minutes until tender.
  4. Add lemon juice and mix.
  5. Heat tortillas, add the mixture into them and fold the tacos.
  6. Serve with mint yogurt dip.


2.Kambu Veggie Burger (Pearl Millet Burger Patties)



Ingredients:

  • 1 cup cooked kambu
  • 1 boiled potato
  • ½ cup grated carrot
  • ½ cup finely chopped spinach
  • 1 tsp cumin powder
  • ½ tsp black pepper
  • Salt
  • 1 tbsp rice flour (binding)

Preparation:

  1. Combine cooked millet, mashed potato, vegetables, spices and rice flour.
  2. Shape into patties.
  3. Fry in little oil or air fry at 180 o C of 12 minutes.
  4. On whole-wheat buns with lettuce + tomato + mint yogurt.


3.Khichdi made of red rice and vegetables.



Ingredients:

  • 50 grams thai red rice (soaked 20 mins)
  • ¼ cup moong dal
  • 1 cup mixed vegetables
  • ½ tsp turmeric
  • 1 tsp ghee or oil
  • Salt
  • Water as needed

Preparation:

  1. Wash soaked rice and dal.
  2. Place vegetables, turmeric, salt, water on the pressure cooker.
  3. Cook for 4–5 whistles.
  4. Pouring ghee or roasted jeera may be added at the end.
  5. Serve soft and warm.



4.Tandoori Moringa Paneer Skewers.



Ingredients:

  • 200g paneer cubes
  • 2 tbsp hung curd
  • 2 tbsp ground moringa blanched into links and blended
  • 2 tbsp ground moringa (blanched and blended)
  • ½ tsp chilli powder
  • ½ tsp cumin powder
  • Salt
  • ½ tsp lemon juice

Preparation:

  1. Combine curd/moringa paste/ spices/ salt.
  2. Wattelstep spread paneer cubes and marinate in 20 mins.
  3. Grill/skewen/pan-fry/air-fry 10 mins.
  4. Before serving sprinkle lemon juice.



5.Kodo Millet (Varagu) Thai Fried Rice.



Ingredients:

  • 1 cup cooked kodo millet
  • 1/2 cup mixed vegetables
  • 1 tsp soy sauce (optional)
  • 1 tsp sesame oil
  • 1 tsp chopped garlic
  • Pepper + salt

Preparation:

  1. Heat sesame oil, add garlic.
  2. Add vegetables and cook on high burner.
  3. Added millet, soy society (choice), pepper, salt.
  4. Stir thoroughly - delicious Indo-Thai mixture fried rice is done.


6.Jackfruit Seed Hummus



Ingredients:

  • 1 cup boiled jackfruit seeds
  • 1 tbsp sesame or til
  • 2 garlic cloves
  • 1 tbsp lemon juice
  • Salt
  • 1 tbsp olive oil

Preparation:

  1. Combine boiled sesame, garlic, salt, lemon.
  2. Add a little water if needed.
  3. Drizzle olive oil on top.
  4. Eat with milk or vecky crackers.



7.Turmeric Leaf Steamed Rice Parcels (Healthy Patholi Twist)



Ingredients:

  • 1 cup idli rice batter/ thinai batter.
  • 1/4 cup grated coconut
  • 1 tbsp jaggery
  • 4 turmeric leaves

Preparation:

  1. Mix coconut + jaggery.
  2. Apply batter, spread toxically, on turmeric leaf.
  3. Add coconut mix, fold and Steam 12-15 mins.
  4. It is a delicacy/snack that burns with its leaf aroma.



8.Amaranth Greens (Arai Keerai) Dosa Rolls.



Ingredients:

  • 1 cup dosa batter
  • 1 cup chopped amaranth greens
  • 1 cup of finely chopped amaranth greens.
  • 1 green chilli
  • Salt

Preparation:

  1. Mix greens into dosa batter.
  2. Make thin dosas.
  3. Roll and roll all like spring rolls.
  4. Cut into bite-size rounds.
  5. Serve with garlic chutney.
