Tamilnadu Traditional Thali recipes 








1. Steamed Rice


Ingredients:

  • Raw rice / Ponni rice – 1 cup
  • Water – as needed

Preparation:

  1. Wash rice well.
  2. Bake in water till tender and sort of fluffy.
  3. As base of the thali serve hot.


3. Sambar (Vegetable + Toor Dal)


Ingredients:

  • Toor dal – ½ cup
  • Vegetable dishes (drumstick, brinjal, pumpkin)
  • Tamarind – small lemon-sized
  • Sambar powder – 2 tsp
  • Turmeric – ¼ tsp
  • Mustard seeds, curry leaves
  • Oil & salt

Preparation:

  1. Prick fry dal until tender and beat up.
  2. Add vegetables to boil and add tamarind water, turmeric and salt.
  3. Add sambar powder and dal, simmer.
  4. Seed mustard and curry leaves pushed in the oil adding to sambar.


3. Rasam (Pepper–Garlic Style)


Ingredients:

  • Tamarind water – 1 cup
  • Crushed pepper – 1 tsp
  • Crushed garlic – 3 cloves
  • Cumin – ½ tsp
  • Curry leaves
  • Mustard seeds
  • Salt

Preparation:

  1. Simmer tamarind water using garlic, pepper, cumin, and salt.
  2. Lightly simmer (do not boil too hard).
  3. Place temper mustard seeds and curry leaves on rasam.


4. Poriyal (Cabbage / Beans / Carrot)


Ingredients:

  • Chopped vegetables – 1 cup
  • Grated coconut – 2 tbsp
  • Mustard seeds, urad dal
  • Curry leaves
  • Oil & salt

Preparation:

  1. soak mustard and urad which have temper, and curry leaves in measure oil.
  2. Add vegetables, salt, saute and cook using minimal water.
  3. Finish with grated coconut.


5. Kootu (Vegetable + Dal)


Ingredients:

  • Ash gourd /Snake gourd- 1 cup.
  • Moong dal – ¼ cup
  • Grated coconut – 3 tbsp
  • Cumin seeds – 1 tsp
  • Green chilli – 1
  • Salt

Preparation:

  • Combine dal and vegetable and cook to softness.
  • Blend the coconut, cumin and green chilli roughly.
  • Add to kootu, simmer briefly.



6. Thayir (Curd)


Ingredients:

  • Thick curd – 1 cup
  • Salt

Preparation:

  1. Whisk curd with salt.
  2. Serve plain or with light tempering in mind.


7. Appalam (Papad)


Preparation:

  1. Roast or fry appalam until crisp.


8. Pickle (Mango / Lemon)


Preparation:

  1. Serve a small amount of typical Tamil pickle as spice.





9. Payasam (Dessert -Paal Payasam)


Ingredients:

  • Rice – 2 tbsp
  • Milk – 2 cups
  • Jaggery / sugar – as needed
  • Cardamom powder
  • Ghee & cashews

Preparation:

  1. Cook rice in milk until soft.
  2. Add sweetener and cardamom.
  3. Fry cashews in ghee and add.
  4. Serve warm.
