Telangana Millet Thalli recipes



1. Jowar Rotte (Sorghum Roti)



Ingredients

  • Jowar flour – 1 cup
  • Hot water – as needed
  • Salt – a pinch

Preparation

  1. Add salt to jowar flour.
  2. Add hot water and knead the warm dough.
  3. The size of a lemon needs to be flattened with wet hands or cloth.
  4. Bake in a hot casting till you see both sides with brown ones.
  5. Serve hot with koora or pappu.



2. Samai Rice (Little Millet)



Ingredients

  • Samai millet – 1 cup
  • Water – 2½ cups
  • Salt – optional

Preparation

  1. Please drop samai in water and leave them to soak 15 minutes.
  2. Add water and cook under pressure in 2 whistles.
  3. Fluff gently and keep warm.



3. Korralu Pappu (Foxtail Millet Dal)



Ingredients

  • Foxtail millet – ½ cup
  • Toor dal – ½ cup
  • Onion – 1 (chopped)
  • Tomato – 1 (chopped)
  • Turmeric – ¼ tsp
  • Green chilli – 1
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Garlic – 3 cloves
  • Oil – 1 tsp

Preparation

  1. Toor dal and cook foxtail millet in the presence of turmeric.
  2. Add a lot of heat oil, mustard, cumin, garlic, chilli, onion.
  3. Add tomato and sauté well.
  4. Dal, cooked, boiled 5 minutes.
  5. Garnish with coriander.



4. Udalu Koora (Barnyard Millet Vegetable Curry)



Ingredients

  • Barnyard millet – ½ cup
  • Mixed vegetables (bottle gourd, carrot, beans) -1 cup.
  • Onion – 1
  • Green chilli – 1
  • Turmeric – ¼ tsp
  • Red chilli powder – ½ tsp
  • Oil – 1 tsp
  • Mustard & cumin – ½ tsp each

Preparation

  1. Barrow millet separately, and put aside.
  2. Add heat oil, mustard and cumin.
  3. Add onion, green chilli; sauté.
  4. and add vegetables, turmeric, chilli powder, salt.
  5. Stir cooked millet and cook 5 minutes.


5. Gongura pachadi ( Sorrel Chutney )


Ingredients:

  • Gongura leaves – 2 cups
  • Green chillies – 3
  • Garlic – 4 cloves
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Salt – to taste

Preparation:

  1. Deep and fry leaves of gongura until tender.
  2. Grind crust pepper and chillies.
  3. Temper with mustard seeds.
  4. Mix well and serve



6. Ulava Charu (Horse Gram Rasam)


Ingredients:

  • Horse gram – ½ cup
  • Tamarind – small piece
  • Garlic – 4 cloves
  • Cumin powder – 1 tsp
  • Pepper powder – ½ tsp

Preparation:

  1. Cook horse gram under pressure till tender.
  2. Pull out the stock and beans are jettisoned.
  3. Freshwater tamarind, garlic, spices, salt.
  4. Boil for 10 minutes.
  5. Serve hot with millet rice.



7. Curd with Green Chilli



Ingredients:

  • Thick curd – 1 cup
  • Green chilli – 1 (slit)
  • Salt – a pinch

Preparation:

  1. Whisk curd with salt.
  2. Add green chilli and mix.



8. Nuvvula Pappu Podu (Sesame Peanut Powder)



Ingredients

  • Sesame seeds – ½ cup
  • Roasted peanuts – ½ cup
  • Dry red chillies – 4
  • Salt – to taste

Preparation

  1. Roast all ingredients individually.
  2. Grind coarsely.
  3. Keep in a dry place.
