Breakfast Recipes - Tamilnadu 


1. Idli (Soft Steamed Rice Cakes)



Ingredients:

  • Idli rice – 2 cups
  • Urad dal – 1 cup
  • Fenugreek seeds – 1 tsp
  • Salt – as needed

Preparation:

  1. Wash rice and soak for 6–8 hours.
  2. Wash urad dal with fenugreek and leave it to soak in 4 hours.
  3. Grind urad dal to a fluffy and rice to a smooth batter.
  4. Blend the two batters, put in some salt, and ferment overnight.
  5. Add batter in greased idli plates.
  6. Steam for 10–12 minutes.
  7. It should be served with a sambar and chutney.



2. Dosa (Crispy Rice Pancake)



Ingredients:

  • Raw rice – 2 cups
  • Urad dal – ½ cup
  • Fenugreek seeds – ½ tsp
  • Salt – as needed
  • Oil – for cooking

Preparation:

  1. Prepare rice and dal separately and soak them in 6 hours.
  2. Blend almond and rice into a fine rice.
  3. Combine, sprinkle with salt and ferment overnight.
  4. Batter Heat and spread thinly.
  5. Pour on oil and fry till golden.
  6. Fold and serve hot.



3. Pongal (Ven Pongal)



Ingredients:

  • Raw rice – 1 cup
  • Moong dal – ½ cup
  • Black pepper – 1 tsp
  • Cumin seeds – 1 tsp
  • Ginger – 1 tsp (chopped)
  • Ghee – 2 tbsp
  • Cashews – few
  • Salt – as needed

Preparation:

  1. Dry roast moong dal lightly.
  2. Bake rice and dal until it is soft.
  3. Fry pepper, cumin, ginger and cashews in heat.
  4. Add cooked rice-dal mixture.
  5. Blend and pour over and serve with chutney.



4. Puttu (Steamed Rice Flour Cylinders)



Ingredients:

  • Rice flour – 2 cups
  • Grated coconut – 1 cup
  • Salt – as needed
  • Water – as required

Preparation:

  1. Combine rice flour and salt and sprinkle with water.
  2. Add coconut and flour mixture in puttu maker.
  3. Steam for 5–7 minutes.
  4. Its serving is with kadala curry or banana.



5. Upma (Rava Upma)

Ingredients:

  • Rava (semolina) – 1 cup
  • Onion – 1 (chopped)
  • Green chilli – 1
  • Mustard seeds – 1 tsp
  • Curry leaves – few
  • Oil – 2 tbsp
  • Salt – as needed

Preparation:

  1. Dry roast rava and keep aside.
  2. Add chilli, onion, curry leaves, and mustard seeds and heat the oil.
  3. Add salt and water and boil.
  4. Gradually add rava and keep on stirring.
  5. Cook till soft and fluffy.



6. Appam (Soft Center Rice Pancake)



Ingredients:

  • Raw rice – 2 cups
  • Cooked rice – ½ cup
  • Coconut – ½ cup
  • Yeast – ½ tsp
  • Sugar – 1 tsp
  • Salt – as needed

Preparation:

  1. Soak raw rice for 6 hours.
  2. Stir using coconut and cooked rice.
  3. Inoculate yeast, sugar, salt and ferment overnight.
  4. Add batter to appam pan and stir.
  5. Cover and bake till sides become crisp.
  6. Serve with vegetable stew.
