Authentic South Indian Homemade Podi Recipes for Everyday Meals



1. Idli Podi (Milagai Podi)



Ingredients:

  • 1 cup urad dal
  • 2 tbsp chana dal
  • 8–10 dry red chilies
  • 1 tbsp sesame seeds
  • 1 tsp cumin seeds
  • 5 garlic cloves
  • Salt to taste
  • 1 tsp oil

Preparation:

  1. Boil oil and dry roast red chilies and make crisp.
  2. Roast dry urad dal and chana dal till goldish.
  3. Roast the sesame seeds and not in large batch.
  4. After that add cumin seeds and garlic, and saute it.
  5. Everything must be cooled down and made into a fine powder.
  6. Add salt and mix well.

👉 Serve with sesame oil or ghee.


2. Curry Alternative (Kariveppilai Podi).



Ingredients:

  • 2 cups curry leaves
  • 2 tbsp urad dal
  • 1 tbsp chana dal
  • 5 dry red chilies
  • 1 tsp pepper
  • Small piece tamarind
  • Salt
  • 1 tsp oil

Preparation:

  1. Dry and clean up curry leaves.
  2. Roast dals, chilies and pepper in oil.
  3. When it is cold, add some curry leaves and roast them.
  4. Add tamarind and cool.
  5. add salt, stuff to a fine powder.

👉 Mix with hot rice + ghee.


3. Paruppu Podi



Ingredients:

  • 1 cup toor dal
  • 2 tbsp chana dal
  • 5 red chilies
  • 1 tsp pepper
  • 1 tsp cumin seeds
  • Garlic (optional)
  • Salt

Preparation:

  1. Spread all ingredients and dry roast until both smell tasty.
  2. Cosmetic and grind to a fine although rough powder.
  3. Keep in an airtight container.

👉 Best with rice and ghee.


4. Flax seed Podi(Aali Vidhai Podi)



Ingredients:

  • ½ cup flaxseeds
  • 2 tbsp urad dal
  • 3 red chilies
  • 1 tsp cumin seeds
  • Garlic (optional)
  • Salt

Preparation:

  1. Put flaxseeds on dry heat till they begin popping.
  2. Roast chilies, cumin and dal separately.
  3. Everything must be cooled and ground to a fine substance.
  4. Add salt and mix.

👉 Healthy podi rich in omega-3.


5. Garlic Podi (Poondu Podi)



Ingredients:

  • 10 garlic cloves
  • 2 tbsp urad dal
  • 4 red chilies
  • 1 tsp pepper
  • Salt
  • 1 tsp oil

Preparation:

  1. Frying Roast urad dal and chilies in oil.
  2. Add garlic and sauté slightly.
  3. Add pepper, salt and grind it up.

👉 Intense taste, accompany with idli.
