1. Sweet Potato Sesame Bowl
Ingredients:
- 1 medium sweet potato (cubes and boiled)
- 1 tbsp sesame seeds
- 1 tbsp roasted peanuts
- 1 tsp olive oil or sesame oil
- ½ tsp black pepper
- Salt to taste
- Few curry leaves
Preparation:
- Heat oil in a pan, and put in curry leaves.
- Add cubes of sweet potato, and saute 2 3 minutes.
- Add salt, pepper, peanuts and sesame seeds.
- Toss well and cook for 1 minute.
- Serve warm as a healthy snack.
2. Carrot Ginger Millet Porridge
Ingredients:
- ¼ cup foxtail millet
- 1 small carrot (grated)
- ½ tsp grated ginger
- 1 cup coconut milk
- 1 cup water
- 1 tsp jaggery powder (optional)
- Pinch of cardamom powder
Preparation:
- Prepare water and cook the millet till soft.
- Add ginger and grated carrot and cook 3 minutes.
- Add coconut milk then stir thoroughly.
- Add Jaggery and cardamom-powder.
- Bake the simmers and serve warm, taking 2 minutes.
3. Pumpkin Seed Coconut Chutney
Ingredients:
- 2 tbsp pumpkin seeds
- 3 tbsp grated coconut
- 1 green chilli
- 1 small garlic clove
- Salt to taste
- Little water
Preparation:
- Blend up pumpkin seeds, coconuts, chilli, garlic and salt.
- Chutney Add some water and grind to smooth.
4. Apple Cinnamon Ragi Pancake
Ingredients:
- ½ cup ragi flour
- ½ apple (grated)
- ¼ tsp cinnamon powder
- ½ tsp baking powder
- ½ cup milk
- 1 tsp honey
- 1 tsp ghee or oil
Preparation:
- Combine ragi flour, grated apple and cinnamon and baking powder.
- Add milk and prepare a fine batter.
- Heats a pan and greased up with ghee.
- Wet pancakes and fry each side.
- Before service sprinkle with honey.
5. Turmeric Lemon Quinoa Salad
Ingredients:
- 1 cup cooked quinoa
- ½ cucumber (chopped)
- ½ carrot (grated)
- 1 tbsp sunflower seeds
- ½ tsp turmeric powder
- 1 tbsp lemon juice
- 1 tsp olive oil
- Salt to taste
Preparation:
- Add cooked quinoa to a bowl.
- Combine mixed cucumber, sunflower and carrot seeds.
- Add turmeric, lemon juice, olive oil as well as salt.
- Toss well and serve fresh.
