1. Crispy Potato Fry
Ingredients:
- 3 medium potatoes (cubed)
- 2 tbsp oil
- 1 tsp chili powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- Salt to taste
- Curry leaves (optional)
Preparation:
- Potatoes cooking time of 5 to 7 minutes (just a not mushy).
- Heat oil in a pan, add leaves of curry.
- Add potatoes and roast on medium flame.
- Add chili powder, turmeric, coriander powder and salt.
- Fry until golden and crispy.
- Can be served with rice, as snack.
2. Potato Masala (on Dosa/ Chapati)
Ingredients:
- 3 boiled potatoes (mashed)
- 1 onion (sliced)
- 1 green chili (chopped)
- 1 tsp mustard seeds
- 1 tsp urad dal
- 1 pinch turmeric powder
- Curry leaves
- 2 tbsp oil
- Salt to taste
Preparation:
- Heat oil, put mustard seeds and allow them to splutter.
- Add some urad dal, curry leaves, green chili and onions.
- Sauté until onions turn soft.
- Add turmeric and salt.
- Add in potatoes that are mashed then stir it.
- Add a small amount of water to soften and cook 2 or 3 minutes.
- Serve with dosa or chapati.
3. Creamy Potato Soup
Ingredients:
- 2 potatoes (peeled & chopped)
- 1 small onion
- 2 garlic cloves
- 1 cup milk
- 1 tbsp butter
- Salt & pepper to taste
Preparation:
- Boil potatoes until soft.
- Melt a butter in a pan and sauté onion and garlic.
- Add potatoes that have been boiled and mash it a bit.
- Add milk and cook for 5 minutes.
- Blend to a smooth place.
- Add pepper and salt and continue to simmer 2 minutes.
- Serve warm.
